Easy Chicken and Cheese Quesadillas Recipe for Quick Family Lunch

Are you wondering what to make for lunch? Do you include your children in meal prep?

Here is a simple, delicious recipe that all of you can create together for a quick and tasty meal anytime. It features simply shredded cheese, shredded chicken, a few vegetables, flour tortillas, and any other spices or condiments you may have on hand. I make these when it is almost time to go grocery shopping, and most of the food is gone from cupboards and the refrigerator.

A Family Friendly Recipe

Years ago, after each quarterly Martial Arts Competition, our family would regularly go to “Tropical Smoothie CafΓ©” for dinner. My son’s favorite thing to order was the Cheese Quesadillas. Paired with an ice cold Orange Dream Smoothie, it was the perfect end to a tough day of Karate Spars and Forms.

Nowadays, I just whip the quesadillas up at home. The recipe I developed (copying the taste and composition of the ones at the Cafe) is easy and quick.

I add chicken for more protein. Usually I make this dish when the cupboards are getting bare, and I am trying to stretch my grocery budget a bit farther.

Quick Lunch Ideas

This afternoon, as I peered into our near-empty refrigerator… I could see that we had flour tortillas, cheddar cheese, and leftover chicken breast. I decided to try to re-create the magic of a newer updated recipe here, in my own kitchen.

The kids AND my husband love this dish served with guac and chips, a side salad, and some salsa.
